** Please Note: With the scare around peanuts/ peanut butter, if you cannot acquire a safe batch, experiment with using tahini (sesame butter) or cashew or almond butter as an alternatives. **
12 ounces Buckwheat Soba Noodles
Juice of 1/2 Lime
2 cloves Garlic, minced
1/2 c Peanut Butter
1/2 c Coconut water (plain water is fine)
3T Sesame oil
1T Agave nectar (dark)
2tsp Red chili paste (or pepper flakes)
3T Tamari
Boil the noodles according to the directions on the package. Whisk all other ingredients together in a bowl. Drain noodles and plunge in a large bowl of COLD water (to stop the cooking). Drain again. Add to bowl with peanut sauce. Toss and serve.
