Minute MADE
This morning I was craving orange juice. I no longer buy the stuff in stores because it gives me acid reflux. So I MADE MY OWN and it only took a minute! I have an Oster juicer (under $20 on Amazon.com) and well worth EVERY PENNY! I juiced 8 oranges, added 1c of water & voila! Instant Yum!! To chill the juice I tossed in a few pieces of frozen pineapple*.....so cool & refreshing....plus the pineapple thawed and made a great after juice dessert! :)

Spring Cleaning
This is the time of year that some folks clean house. This spring my partner & I are cleaning house too...OUR BODIES. We are starting a journey to alter what we eat and enjoy improved health. Over the course of two months we will increase foods that make us feel alive and well while taking a hiatus from the foods that don't. Success = any of the following:

Connecting The Dots: Cancer...Food...Farms
I love how angles can come together to support one point. Today I was talking to an herb friend about how different herbs taken simultaneously can work together to support the body tremendously. Later I happened upon a TED TV talk about starving out cancer through food choices. In the talk, William Li, mentions compounding teas for a greater effect than using just one. He also talks about how food could be a much more viable option for those who cannot afford/ don't have access to medical-pharmaceutical treatments.
Then I got an e-mail from some friends who have been studying sustainable farming practices in Cuba. They are making a film and creating ways to educate people in Santa Cruz, CA on these farming practices. (watch video kicker on the right).---->
Here's to playing a game of dot-to-dot!

Uncleansing & Loving It!
When my body declared it was time to end my cleanse I wanted to celebrate with GREAT food. So my best foodie friend Amanda & I made our way to Café Trio (Salt Lake City). EVERYONE MUST HAVE THE ROSEMARY FLATBREAD! I also ordered potato soup and chopped salad. The soup was ok, the salad WOWZER! Thank you Trio for preachin' to this choir about how salad doesn't need to be drowned in dressing to be scrumdeliYUM! Currants, cheese, mixed greens and (what looked like diced mango but turned out to be a wonderful surprise of) golden beets! WAHOO! I was in palate heaven. And, btw, the music was kick butt! Run don't walk to Trio!

Now playing: ASPARAGUS

Zesty Parboiled Asparagus
1 bunch asparagus
2 tablespoons olive oil
Juice of one lemon
1 teaspoon lemon zest
Sea salt and pepper to taste
2 tablespoons freshly grated parmesan cheese (optional)
Wash asparagus and break off bottoms.
Cut into 1- to 2-inch pieces, on the diagonal.
Fill a medium-size saucepan halfway up with water and bring to a boil.
Add the asparagus, reduce heat to a simmer and cook asparagus for 2 minutes.
In a medium sized bowl combine oil, lemon juice, lemon zest, salt and pepper.
Toss asparagus in sauce.
* Seasonal foods are often far less expensive. Yesterday I saw gorgeous bundles of asparagus for 99¢ per pound (at Whole Foods no less) Check your local market!

A Renaissance in Mesmerizing Technicolor!
A few years ago there was a shooting that shocked the otherwise calm & relatively safe haven of Salt Lake City. The once lovely, historic Trolley Square became a graveyard. The joojoo there quickly fell dark. Vendors packed up and moved on. The square became a baron well of nothingness, a mere shadow of it's former glory. Then came a renaissance...a resurrection, if you will!
For those who are looking, there have been many examples of this recently. I was swept up in the love and camaraderie as I drove across the country from Washington DC to Salt Lake City just days after 9/11. A friend reported that there was an epic sense of joie de vivre and a powerful-yet-gentle & loving sense of civic duty as she arrived in Egypt after the fall of government. Two days ago I received an e-mail forward from a woman in Japan that describes her experience as surreal. Though earthquakes were still coming every 15 minutes, people were thankful for their blessings. Those with food are sharing, those with running water are filling buckets for their neighbors. There hasn't been any looting in here areas...
When I express great joy in my body over something like the opening of the Whole Foods Market superstore at Trolley Square in Salt Lake City, it has nothing to do with commercialism and everything to do with the possibilities of ALIVENESS THRIVING FROM A PLACE WHERE A DEEP PAIN COULD HAVE EASILY TAKE HOLD TO RUIN. Yesterday (and still today) I CELEBRATE the irony of two friends who have recently experienced despair like no other, who chose LIFE, eating in brilliant colorful surroundings of fragrant fresh flowers, gorgeous, local organic food that would feed and nourish our effervescent souls even more as we continue to ride life's awesome waves. In the words of my resilient aunt, Phyllis, I loudly count myself & proclaim that I am still, haha, AMONG THE LIVING!

C = Chefs, Cookies, Comical Crack-Ups & Monsters
I have been craving sweets lately so I decided to make cookies! I made vegan coconut-oatmeal cookies and g/f peanut butter cookies. Instead of granulated sugar I used local honey (where the recipe called for white sugar) and grade B maple syrup (where the recipe called for brown sugar). It's worth noting that I could have been slightly influenced as a little girl. That is to say, a little girl, with a mini record player and just ONE album. Perhaps I hypnotized myself (lol) by playing this song over and over and over again....

Falling in Self Love: Day 233
Mirror, Mirror
I recently found myself frustrated with a circumstance in my life. After unsuccessfully being able to change it from the outside, I've decided to change my relationship to it. This is no new concept. Actually it is one I thought I new well....lol...apparently not. :) Anyhoo, I started the day by eating well, I figure if my body is well fueled, I'm apt to make better decisions. I had noodle salad w/ shrimp over a plate of organic veggies. I feel comfortably full and clear!

Valentine's Day YUM!
Today I wanted to make an ice cream for one special person :) She loves oreo cookies (which meant vegan was out the window so I improvised...I did, however manage to not add any eggs or sugar) ...and here's the yum of the day (w/ veg*n friendly suggestions):

Cookies & Cream Ice Cream
1 pint heavy cream (soy cream or coconut milk)
3/4 cup honey (agave might do but may not harden all the way)
1/2 c milk (your favorite vanilla flavored milk substitute)
1 tablespoon vanilla*
Pinch of salt
6 Oreos, crumbled
Blend first 5 ingredients. Pour into an ice cream maker. Add crumbled cookies. Pour into container and place in freezer until set. Enjoy!!
* Singing Dog is my current fave (made in Oregon)

Falling in Self Love: Day 225
Getting Set
My surroundings are so peaceful today yet I feel an uneasiness inside. More of an anxious feeling...like the kind I used to get when I ran track. On your mark, Get Set (OMG!) Go. Funny, when they said "On your mark" I felt steady, getting in the block and breathing. When they said "GO" I was happy to sprint off, putting everything I'd practiced and all of my passion into motion. It was the "GET SET" that always had me choked up. Here it is again today. This feels like the calm before the storm. I have an idea as to why these stirrings are here. For the record, the storm to which I refer is a good one, like spring rain after an exceptionally dry year. So...with the TAO of Pooh, my 14 year old golden and a dish of organic fruit, homeade yogurt (w. a splash of maple) in tow...I'm off to the park. To walk, relax my spirit and let the winter winds wash over me. Happy Monday ME day to all!
