I found half a zucchin a friend had brought over this week to our dinner-in-the-garden. A gift of stew that one of my students recreated from one of our ethnic food classes. Plus garden fresh goodies. This is what I came up with:
Zucchini steamed (as an open faced bun)
stew + couscous formed into patties
onion, olives and chives cooked in a pan
salad w/ tomatoes, cucumbers & green peppers (from our garden)
garnish: rose petals & borage flowers

I always have the story that there is nothing to eat, even with a full pantry and items in the freezer. Thanks for the reminder and inspiration.
My pleasure...it is fun to create new cool things outta the old drab stuff. Heeeeyyy, you're a genius at that too!
