Yesterday I wanted a tasty treat. Curious about what I could create with what I had on hand this is what I came up with....Crépe: Start with a basic crépe recipe*. Then add to the batter:
1T of lemon zest
Filling:
1 ripe banana, sliced
2T of pecans
1/2 tsp cinnamon
Garnish:
Maple syrup, warmed
Lightly toast the pecans (until you can smell them).
Place in a bowl & set aside.
Place bananas in warm pan you just used. Let sit on stove covered (flame OFF)
Grind the nuts and cinnamon to a fine dust (try a mortar & pestle or coffee bean grinder)
Lay crépes on a plate, fill with bananas, drizzle with maple syrup & sprinkle with "cinnanut" dust! YUM!
