It's that time when the sun has us feelin' hot, hot hot! It is the perfect season for relaxing in a hammock (on the beach or in your backyard). Why not set yourself up nice with a virgin piña colada? Why virgin, 'cause alcohol depletes our system... totally opposite of all the good the coconut wants to do for us. Give this recipe a whirl:
Juice from one young coconut
Flesh (aka meat) from young coconut
1 cup of ripe fruit (pineapple, peach, strawberry, mango, papaya...)
2 frozen ripe bananas (or 1/2 cup ice)
Squeeze of lime
Pinch of salt
Blend ingredients together. Use the coconut shell as a goblet. Add crazy, colorful straw, make a toast to the goodness of life and enjoy!
